Build Your Own Poke Bowl

Poke bowls...I have had mixed feelings about them. I either eat amazing ones or really badly made ones that make me feel sick. So our relationship has been a little like a rollercoaster really. Until one day I decided to make my own, at home.

It came out of a necessity. I was on my way home from a long walk at the park and was feeling hungry. I really felt like having some smoked salmon and I also felt like having rice. When I first thought about it my brain was like EW they don't go together. After a few minutes I realised that that's exactly what a poke bowl is. I also needed to choose something that's nice and healthy from my gut (fermented foods).15 minutes later I had bought some smoked salmon and avocado, got home, made some rice and added a few things and ended up with a yummy, quick and fresh dish.

Okay okay fine, I'll stop talking and tell you how to make it.

What you need:

- 1/2 pack smoked salmon

- 1/2 cup steamed rice

- 1/2 avocado

- 1 tsp pickled cabbage

- 1/2 tsp pickled artichoke

- 1 tbsp pickled ginger

- A drizzle of soy sauce

How to make it:

- Bring your water and rice to boil in a pot.

- Once rice is cooked serve it in a bowl and layer up with the rest of ingredients.

- Drizzle some low sodium soy salt over the salmon and enjoy!
